5-11-11: Sweet, Spicy, and Hot

How do YOU BBQ?  Our resident foodie Sascha Wolhandler, of Sascha’s 527, tells us how to make five different kinds of barbecue sauce.  Choose your favorite–and perfect it in time for Memorial Day.

Carolina-Style Sauce
Yellow mustard
1/2 cup sugar
1/4 cup light brown sugar
3/4 cup cider vinegar
1/4 cup water
2 Tbsp chili powder
1 tsp black pepper
1 tsp white pepper
1/4 tsp cayenne pepper
1/2 tsp soy sauce
2 Tbsp butter

Mix all ingredients except soy sauce and butter.  Simmer 30 minutes, then add soy sauce, butter, and simmer 10 minutes longer.

Simple Sauce
2 cups ketchup
1 tbsp Worcestershire or soy sauce
1 tbsp chili powder
1/2 cup red wine
1/4 cup rice vinegar
1/2 cup minced onion
1 tsp minced garlic
salt and pepper

Combine and simmer for 10 minutes.

Moroccan
Same as the simple sauce, but add lime juice, coriander, cloves, cumin, and cayenne.

Caribbean
Same as the simple sauce, but add  paprika, granulated garlic, thyme, orange juice, sugar, and cayenne.

Super Sonic Texas
Same as the simple sauce, but add chipotle peppers, sriracha, cumin, coriander, and honey.

Asian-Style Sauce
1 cup soy sauce
1/2 cup sesame oil
1/4 cup water
8 cloves crushed garlic
1 bunch chopped scallions
1/4 cup ginger
1 cup sugar

Combine and simmer for 10 minutes.

Grilling tip:  Add the sauce to the meat towards the end of its time on the grill, so if it has lots of sugar, it doesn’t burn or carmalize.
